Baja Shrimp Tacos
Take a trip south of the border with this shrimp tacos. Crunchy cabbage slaw, lots of lime and a creamy garlic mayo on top of marinated shrimp will give you all the beach vibes. I like to grill the shrimp, but these can easily be made on the stovetop too.
Baja Shrimp Tacos
Ingredients
For the Marinade
- 1 tsp each salt and pepper
- 1 lime, zested
- 3 limes, juiced
- 2 tbsp cilantro, minced
- 2 garlic cloves, minced
- ½ tsp cumin
- 1 tbsp olive oil
- 1 lb shrimp
Cabbage Slaw
- 3 cups cabbage, shredded
- ¼ cup cilantro, minced
- ¼ cup red onion, thinly sliced
- ½ avocado, thinly sliced
- 1 lime, juiced
- 1 tbsp olive oil
- 1 tsp each salt and pepper
Garlic Lime Mayonnaise
- ⅓ cup mayonnaise
- 2 tbsp hot sauce
- 1 lime, zested
- ½ tsp garlic powder
- ½ tsp salt
For serving
- tortillas
- crumbled queso fresca
- cilantro
- avocado
Instructions
- In a large bowl, combine all marinade ingredients except shrimp. Whish thoroughly. Add shrimp and allow to marinate for 30 minutes.
- Make slaw by combining all ingredients and tossing gently.
- Make garlic lime mayo by combining all ingredients and whisking thoroughly until smooth. Add water as needed to thin.
- Heat a grill or pan. Saute shrimp until pink and cooked through.
- Assemble tacos by heating tortillas individaully. Off heat, top tortillas with slaw, shrimp, garlic lime mayo and garnish with cilantro, queso fresca and avocado.
