Buffalo Chicken Salad
Crispy, tangy with a little spice, this salad combines everything there is to love about Buffalo Chicken Wings in a (somewhat) healthier way. Makes a great meal for a hot summer weeknight. Use rotisserie chicken if you’re short on time!
Buffalo Chicken Salad
Servings: 4 people
Ingredients
- 2 grilled or poached chicken breasts cut into strips
- ½ cup buffalo sauce
- salt and pepper
- 1 tbsp melted butter
- 1 head romaine cleaned and roughly chopped
- ½ cup crispy onions
- ½ red onion thinly sliced
- ½ english cucumber diced
- 1 avocado sliced
- 1 large carrot shredded
- ranch dressing
Instructions
- Place the melted butter and buffalo sauce in a medium bowl, add about 1/2 tsp each of salt and pepper. Mix well. Add chicken slices and toss to coat.
- Assemble salad with romaine on the bottom of each salad bowl. Top with remaining ingredients as desired.
