Chicken Lettuce Wraps

These lettuce wraps are so fresh and delicious! Packed with veggies, they are a meal that I always feel good serving my family. Chopping the vegetables takes some time so I often have the kids help with the prep while I make the sauce and prepare the chicken. Make sure you have everything ready to go before cooking the chicken. Cook time is quick!

Ingredients

  • 1 tbsp cooking oil

Chicken Mixture - In a medium bowl combine:

  • 1 lb ground chicken (or turkey)
  • 1 tsp cornstarch
  • 2 tsp sherry
  • 1 tsp salt
  • 1 tsp pepper

Chicken Aromatics - In a separate small bowl combine:

  • 2 tsp ginger minced
  • 2 tsp garlic minced
  • ½ small onion minced
  • ½ tsp red pepper flakes
  • 1 can water chestnuts diced
  • 1 tbsp cooking oil

Sauce - In another separate small bowl combine:

  • 4 tbsp hoisin sauce
  • 2 tbsp soy sauce
  • 2 tbsp sherry
  • 1 tbsp fish sauce
  • 2 tsp sesame oil
  • 2 tsp cornstarch

Serve with:

  • 1 package ramen noodles prepared
  • 1 head butter lettuce leaves washed and separated
  • 1 cup snap peas diced
  • 1 cup cucumber diced
  • 1 red pepper diced
  • 2 med carrots diced
  • ½ c cilantro leaves
  • hoisin

Instructions

  • Prepare all ingredients as noted above.
  • Heat a large frying pan over medium heat. Add cooking oil.
  • Once oil is hot, carefully add the chicken mixture and raise heat to high. Cook, stirring constantly until chicken is nearly cooked through.
  • Clear the center of the pan and add the Chicken Aromatics. Allow to cook, stirring gently within the center of the pan until fragrant - about 1 minute. Stir into chicken mixture.
  • Add in the Sauce ingredients and cook stirring frequently until thickened slightly. Remove from heat.
  • Prepare lettuce wraps with a scoop of chicken, vegetables, ramen and more hoisin.
