Baja Shrimp Tacos

Take a trip south of the border with this shrimp tacos. Crunchy cabbage slaw, lots of lime and a creamy garlic mayo on top of marinated shrimp will give you all the beach vibes. I like to grill the shrimp, but these can easily be made on the stovetop too. 

Baja Shrimp Tacos

Ingredients

For the Marinade

  • 1 tsp each salt and pepper
  • 1 lime, zested
  • 3 limes, juiced
  • 2 tbsp cilantro, minced
  • 2 garlic cloves, minced
  • ½ tsp cumin
  • 1 tbsp olive oil
  • 1 lb shrimp

Cabbage Slaw

  • 3 cups cabbage, shredded
  • ¼ cup cilantro, minced
  • ¼ cup red onion, thinly sliced
  • ½ avocado, thinly sliced
  • 1 lime, juiced
  • 1 tbsp olive oil
  • 1 tsp each salt and pepper

Garlic Lime Mayonnaise

  • cup mayonnaise
  • 2 tbsp hot sauce
  • 1 lime, zested
  • ½ tsp garlic powder
  • ½ tsp salt

For serving

  • tortillas
  • crumbled queso fresca
  • cilantro
  • avocado

Instructions

  • In a large bowl, combine all marinade ingredients except shrimp. Whish thoroughly. Add shrimp and allow to marinate for 30 minutes.
  • Make slaw by combining all ingredients and tossing gently.
  • Make garlic lime mayo by combining all ingredients and whisking thoroughly until smooth. Add water as needed to thin.
  • Heat a grill or pan. Saute shrimp until pink and cooked through.
  • Assemble tacos by heating tortillas individaully. Off heat, top tortillas with slaw, shrimp, garlic lime mayo and garnish with cilantro, queso fresca and avocado.
