Greek Chicken Meatballs

These meatballs get tons of flavor from fresh herbs and lemon zest. They are baked which makes them healthier than frying, but you could certainly prepare them by frying in a bit of oil on the stove if you prefer. I love to serve them with Cava Crazy Feta which I find at my local Whole Foods. It’s creamy and has a little spice from jalapenos. Make a simple salad, add to a rice bowl or serve gyro-style on pitas. So good any way you serve them up!

Greek Chicken Meatballs

Ingredients

  • 2 lbs ground chicken
  • ¼ cup red onion minced
  • ¼ cup fresh mint chopped
  • ¼ cup fresh dill chopped
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tsp cumin
  • ¼ cup parsely chopped
  • ½ tsp red pepper flakes
  • ½ tsp lemon zest
  • 1 egg
  • 1 cup panko bread crumbs
  • Cava Crazy Feta for serving

Instructions

  • Line a baking sheet with parchment paper and preheat oven to 350° F
  • Place the ground chicken into a large mixing bowl. Add the red onion, mint, dill, garlic powder, oregano, black pepper, salt, cumin, parsely, red pepper and lemon zest. Mix gently.
  • Add egg and panko. Mix gently until combined.
  • Wet your hands and roll mixture into meatballs and place on lined baking sheet.
  • Bake for about 15 minutes, flipping once. Serve with Cava crazy feta.
