Grilled Artichokes with Lemon Aioli
When the daffodils begin to sprout and artichokes arrive in the produce section, it’s sure sign spring is on it’s way! Steaming the artichokes makes them tender and grilling adds a deep smoky flavor that is complemented by a bright lemon aioli.
Grilled Artichokes with Lemon Aioli
Servings: 4 people
Ingredients
- 2 artichokes
- 2 tbsp olive oil
- 1 tsp each salt and pepper
- 2 lemons 1 sliced, 1 halved
Lemon Aioli
- 1 cup mayonnaise
- zest of 1 lemon
- 1 tbsp whole grain mustard
- 1 small garlic clove minced
- 1 tbsp capers roughly chopped
- 1 tbsp parsley dried
- ½ tsp salt
- 1 tsp black pepper
Instructions
- Trim the end of the artichoke leaves to remove sharp thorns. Slice the artichokes vertically and scoop out the furry choke in the center removing the small purple leaves as well.
- Place a steamer basket in a large pot of boiling water. Place artichokes cut side down in steamer basket. Tuck lemon slices in between the artichokes. Steam for about 10 minutes or until the artichoke heart is tender when pierced with a knife. Remove from heat.
- Prepare lemon aioli by mixing all ingredients and place in a serving dish.
- Heat grill to medium high heat.
- Place artichokes on a platter and coat lightly with olive oil and sprinkle with salt and pepper.
- Grill artichokes until char marks begin to form, flipping once. Grill lemon halves until grill marks form.
- Serve artichokes while hot with grilled lemon and aioli.
