Mediterranean Chicken Bowl
Bowls are the ultimate crowd-pleaser because everyone builds them to their liking. Perfect for kids and picky eaters! This recipe is one of our favorites. The chicken is is coated in a flavorful spice blend of curry, cumin and garlic. Creamy tzatziki, crunchy lettuce and roasted sweet potatoes add lot of texture beautiful colors.
Mediterranean Chicken Bowl
Servings: 4 people
Ingredients
- 2 red peppers sliced
- 1 white onion sliced
- 2 chicken breasts cut into small strips
- ½ tsp each garlic powder, cumin, chile powder mixed together
- 1 large sweet potato cubed
- olive oil
- salt and pepper
- 1 tsp each of garlic powder, curry, cumin, smoked paprika mixed together
- 2 tbsp lemon juice
For Serving
- diced cucumbers
- sliced kalamata olives
- tzatziki (I like Boar's Head)
- crumbled feta
- shredded romaine lettuce
Instructions
- Preheat the oven to 400℉
- Line 2 baking sheets with parchment paper.
- On one of the baking sheets, place the red peppers on one ⅓ of the pan. Place onions in the middle ⅓ of the sheet and sweet potatoes on the final ⅓. Drizzle all with olive oil and sprinkle with salt and pepper. Sprinkle garlic, cumin, chile powder mix over sweet potatoes and toss to coat. Place in oven.
- In a mixing bowl, place sliced, raw chicken. Drizzle a little olive oil over chicken. Add galric, cumin, curry, paprika mix, lemon juice and about a tsp each of salt and pepper to the chicken. Toss to coat well. Place on remaining parchment lined baking sheet, spreading out the pieces of chicken, and place in oven.
- While chicken and vegetables cook, prepare ingredients for serving by placing them on a large platter. Add chicken and vegetables to platter once cooked through, about 20 minutes.
