Perfect Grilled Chicken
My favorite way to prepare grilled chicken. After a bite, my neighbor once said “oh wow, this chicken is perfect!”…hence the name. I love it because the ingredients are always on hand in our house and there’s no time spent mixing a complicated marinade or waiting for flavors to develop. You can simply coat the chicken with all the ingredients as the grill heats and cook immediately. The balsamic vinegar carmelizes with the heat to lend a slight sweetness.

Ingredients
- 2 chicken breasts
- 2 tbsp balsamic vinegar
- 1 tbsp olive oil
- 1 tbsp santa maria seasoning
Instructions
- Preheat grill to high heat.
- Cut the chicken breast into smaller pieces. See video for instructions. For extra tender chicken, place pieces between 2 sheets of wax paper and gently pound with a meat mallet.
- Place chicken in a bowl with remaining ingredients and mix well.
- Place chicken on hot grill and lower heat to medium. Grill until chicken has marks on one side and releases easily. Flip and finish cooking through. Don't overcook. Chicken will continue to cook while resting.
- Remove from grill and allow to rest for 10 minutes.
